Jammin' Cran Meatballs
Baked ground beef simmered with a sweet and sour cranberry-orange sauce.

Combine beef, eggs, salt, pepper, and bread crumbs, mixing lightly but thoroughly. Shape into 72 two-inch meatballs. (Meatballs can be shaped using #40 scoop.) Place meatballs on baking sheet or in hotel pan.
Bake in preheated oven to medium (160°F) doneness until no longer pink in center and juices show no pink color.
Conventional oven: 400°F; 18 to 20 minutes.
Convection oven: 375°F; 12 to 15 minutes.
In a large nonstick skillet, combine all remaining ingredients. Bring to a boil; reduce heat to medium-low.
Simmer, uncovered, 5 minutes, stirring and slightly pressing to crush whole berries.
Add meatballs to skillet; continue to cook until meatballs are heated through, stirring occasionally.
