Citrus Steaks with Spicy Orange Sauce
Yield: Makes 24 servings
Orange-Garlic Rub: 
Combine Rub ingredients. Cover and refrigerate until ready to use. 

Yield: about 1/2 cup
Grated fresh orange peel2 tablespoons
Minced garlic1/4 cup
Pepper1 tablespoon
Spicy Orange Sauce: 
Combine sauce ingredients. Cover and refrigerate until ready to use.

Yield: 3-3/4 cups
Nonfat plain Greek-style yogurt or plain nonfat regular yogurt3 cups
Freshly squeezed orange juice3/4 cup
Chopped fresh cilantro1/3 cup
Chipotle chili powder1-1/2 to 2 teaspoons
Per Order: 
Press 1 teaspoon Orange-Garlic Rub evenly onto 1 beef steak. Grill steak to medium rare (145°F) to medium (160°F) doneness, turning occasionally.

Season steak with salt, as desired. Serve steak with 2-1/2 tablespoons Spicy Orange Sauce.
