Cocoa nibs3/4 Cup
Brown sugar3/4 Cup
Dry mustard3/4 Cup
Chile powder1/4 Cup
Salt1/4 Cup
Cayenne pepper2 Tbsp.
Pepper2 Tbsp.
Cornbread Dressing:  
Cornbread cubes24 Cups
Carrots, diced3 Cups
Celery, diced3 Cups
Onion, diced3 Cups
Butter12 oz.
Salt and pepperAs needed

To make Sweet-n-Hot Steak: In spice grinder, pulse cocoa nibs to coarse granules. Mix with all remaining ingredients except steak. Season each steak with 2 tablespoons spice mixture.


Yield: 24 steaks
