Ribeye with Cumin-Chipotle Rub:  
Beef Rib, Rib Steak, Bone In16 oz. 24 Each
Chipotle chili powder1/2 Cup
Salt1/2 Cup
Ground cumin1/3 Cup
Fiesta Rice:  
Onion, diced3 Cups
Red bell pepper, diced3 Cups
Diced tomatoes3 Cups
Olive oil1/4 Cup
Cilantro, chopped1 Cup
Cooked white rice, warm24 Cups
Salt and pepperAs needed

To make Rib Eye with Cumin-Chipotle Rub: Combine chipotle powder, salt and cumin. Season each steak with 2 1/2 teaspoons spice mixture.

Yield: 24 steaks

Cooked black beans, warm24 Cups
Avocado, dicedAs needed
Red onion. thinly slicedAs needed
Fresh cilantroAs needed
