Roasted Vine Tomatoes: 

To make Roasted Vine Tomatoes: Place tomatoes on sheet pan; drizzle with olive oil and sprinkle with salt and pepper. Roast in 400°F oven 6-8 minutes or until warm.

Yield:  48 tomatoes

Olive oil1/4 cup
Salt and pepperas needed
Smashed Potatoes: 

To make Smashed Potatoes: Simmer potatoes about 15 minutes or until tender but not falling apart; drain. Toss with oil, salt and pepper; spread on sheet pan. With a second sheet pan, crush potatoes gently just until they start to split. Roast in 450°F oven about 10 minutes or until potatoes are golden. Sprinkle with scallions.

Yield:  about 12 cups
Red-skin potatoes, small6 pounds
Vegetable oil1/4 cup

Scallions, chopped1/4 cup

For each serving, to order: Season 1 steak with salt and pepper; grill to desired doneness. Plate steak with 2 Roasted Vine Tomatoes and 1/2 cup Smashed Potatoes. Garnish with 2 scallion tops.
