Mustard and Lavender Encrusted Smoked Ribeye with Olive Pesto

INGREDIENTSQUANTITYDIRECTIONS
  
Season Ribeye Roast with salt and pepper.  In large roasting pan brown all sides of roast.  Set aside.
Beef Rib, Ribeye Roll1 each
Kosher saltas needed
Black pepperas needed
Olive oilas needed
Rub: 
Combine rub ingredients.

Carefully carve cap muscle back leaving a hinge  **do not remove cap.  Spread rub ingredients over cut surface.  Lay cap back on; truss roast.

Smoke ribeye roast until medium rare doneness.
Coarse grain mustard2 cups
Chopped fresh thyme leaves1 cup
Chopped fresh lavender leaves1/3 cup
Pesto: 
Place pesto ingredients in bowl of food processor; process until smooth.  Set aside.
California black olives4 cups
Vella Jack cheese, aged, grated2 cups
Fresh Italian parsley leaves1 bunch
Walnut halves1 cup
Minced garlic1 tsp.
Kosher salt1/8 tsp.
Black pepper1 tsp.
Olive oil1-1/2 cups
Per Order: 
Carve 1-inch thick steak from ribeye roast.  Serve with 3 Tbsp. pesto.  Garnish with shaved Vella Jack cheese.
