BBQ Beef Sundae
BBQ ground beef layered with mashed potatoes in a fun “sundae” presentation.
Yield: 100 servings
Combine ground beef crumbles and 12-1/2 cups barbecue sauce. Heat, covered, until 165°F; keep warm until ready to use.
Frozen fully-cooked ground beef crumbles, defrosted14 pounds
Prepared tomato-based barbecue sauce18 3/4 cups
Prepare mashed potatoes according to package directions; stir in 12-1/2 cups cheese. Cover; keep warm until ready to use.

Cook vegetables until heated through; keep warm until ready to use.

Reduced fat shredded Cheddar cheese25 cups
Salt and pepper as needed
Frozen mixed vegetables, defrosted, drained25 cups
Per order: Place 1/4 cup potatoes in sundae dish or 10- oz bowl. Top with 1/3 cup beef mixture and 1/4 cup vegetables. Finish with another 1/4 cup potatoes, about 1 Tbsp barbecue sauce, 2 Tbsp cheese and top with 1 cherry tomato.

Note: For best results, use a dark, thick barbecue sauce to resemble chocolate syrup.
