Wokkin’ Beef Fried Rice
Fluffy fried rice with ground beef, red bell peppers, peas and green onions served in fun takeout boxes.
Yield: 100 servings
Heat crumbles according to package directions. Cover; and keep warm.
Frozen fully-cooked ground beef crumbles, defrosted14 pounds
Heat oil in large skillet over medium-high heat until hot. Add bell peppers, peas and green onions; stir-fry about 1 minute.

Stir in warm cooked beef, hot rice, soy sauce, ginger, garlic powder and black pepper; cook 3 to 4 minutes or until heated to 165°F, stirring occasionally.

Hot cooked brown rice (prepared without butter or salt)18 3/4 quarts
Reduced sodium soy sauce4 3/4 cups
Ground ginger6 tablespoons
Garlic powder1/4 cup
Ground black pepper2 tablespoons
Per order: Scoop a generous 1 cup portion rice mixture into creative carryout container such as handled to-go boxes. Garnish with optional scallion frills and celery ‘chop sticks’ or celery scoops.
