Jerk Steak Sticks
Steak strips marinated with Caribbean-style jerk spices, skewered, coated with coconut crust, and friend and golden; served with grilled pineapple and a tangy Island Chutney for dipping.

1. Cut steaks into ¼-inch thick strips. In non-reactive container, combine jerk mixture and steak strips; turn strips to coat. Cover and refrigerate 234 hours.

2. To make Island Chutney: Combine all ingredients, mixing well. Cover and refrigerate. Yield: about 6 cups

3. For each serving, to order: Thread steak strips on 48 skewers. Dip 2 prepared skewers into tempura batter, just to cover beef; dredge both sides in untoasted coconut, pressing lightly to coat. Holding skewers, deep-fry about 2 minutes in hot
(350°F) oil until golden brown and beef is medium rare; drain well on paper towels. Plate 3 pineapple pieces on serving plate. Arrange skewers on pineapple. Garnish with 2 cilantro sprigs, 1
tablespoon chopped cilantro, 1 tablespoon toasted coconut, 1 tablespoon green onion and 1 tablespoon red bell pepper. Serve with ¼ cup Island Chutney.
