Steak 'n Queso Fries
Thick-cut steak fries piled nacho-style, with strips of seared steak, jalapeno cheese sauce, Pico de Gallo and guacamole. * Any variety of Philly-style beef steaks can be used * Any variety of Philly-style beef steaks can be used
Yield: 12 cups

Pico de Gallo 
1. To make Pico de Gallo: In bowl, combine all ingredients, mixing lightly. Cover and set aside.
Tomatoes, diced4 1/2 pounds
Onions, finely chopped6 ounces
Cilantro leaves, coarsely chopped3 ounces
Jalapeno peppers, finely chopped1/4 cup
Salt1 tablespoon
Black pepper1 1/2 teaspoons
Frozen French fries12 pounds
Hot oil as needed
Frozen break-apart philly-style beef steaks, thick cut*6 pounds
Salt as needed
Black pepper as needed
Prepared jalapeno cheese sauce, heated and kept warm12 cups
Prepared guacamole6 cups
Chopped green onions1 1/2 cups
Cilantro leaves, coarsely chopped1 1/2 cups
