Sesame Beef and Broccoli Stir-fry
Tender pieces of Philly-style steak strips and broccoli served over a bed of jasmine rice, topped with savory garlic stir-fry sauce.
Yield: 24 servings
Garlic Stir-fry Sauce 
1. To make Garlic Stir-fry Sauce:

In pan, heat oil until hot. Stir-fry garlic and ginger until golden brown. Add remaining ingredients; bring to a boil. Reduce heat and simmer 5 minutes. Stir in cornstarch-water mixture; simmer until thickened and bubbly. Cover and

set aside. Yield: 24 cups
Vegetable oil3/4 cup
Garlic, minced10 ounces
Ginger, fresh, finely chopped2 ounces
Chicken stock or reduced-sodium chicken broth5 quarts
Hoisin sauce1 1/4 cups
Oyster sauce1 1/4 cups
Reduced-sodium soy sauce1 1/4 cups
Dark sesame oil3 tablespoons
Black pepper1 tablespoon
Cornstarch dissolved in 1-1/2 cups water6 ounces
Vegetable oil1 cup
Thick cut Steak-EZE Breakaway Steak (4 ounces each)24 portions
Ginger, fresh, finely chopped5 ounces
Salt2 tablespoons
Blanched pea pods20 ounces
Blanched baby broccoli, cut into 2-inch pieces (about 4 pounds, 8 ounces raw)5 pounds
Onions, sliced, sautéed (about 7 pounds raw)104 ounces
Red bell peppers, sautéed (about 7 pounds, 8 ounces raw)7 pounds
Cilantro leaves, fresh, coarsely chopped15 ounces
Jasmine rice, cooked, hot36 cups
Sesame seeds, toasted2 1/2 ounces
