A panini-style sandwich on a Cuban roll with sautéed steak strips, Chimichurri Sauce, Black Bean Aioli, sliced pickles and melted Gouda cheese.
Yield: 24 servings
INGREDIENTSQUANTITYDIRECTIONS
Chimichurri Sauce 
1. To make Chimichurri Sauce:

In bowl, mix ingredients until blended. Cover and set aside. Yield: 2 cups
Extra virgin olive oil1 1/2 cups
Red wine vinegar2/3 cup
Parsley, fresh, chopped1/3 cup
Cilantro leaves, coarsely chopped3 tablespoons
Garlic, minced1 teaspoon
Salt1 teaspoon
Ground cumin1/2 teaspoon
Black pepper1/2 teaspoon
Black Bean Aioli 
2. To make Black Bean Aioli:

In bowl, mix ingredients until thoroughly blended. Cover and refrigerate. Yield: about 3-1/2 cups
Mayonnaise2 1/2 cups
Canned black beans, drained, chopped6 ounces
Liquid smoke1/4 teaspoon
Soft Cuban rolls*, split24
Gouda cheese48 slices
Frozen Philly-style shaved beef24 portions
Salt and black pepper as needed
Tomato48 slices
Dill pickle slices48 - 96
Baby lettuce mix12 ounces
