Beefy Alphabet Soup
Sautéed cubed beef simmered with celery, carrots and alphabet noodles, then sprinkled with Parmesan cheese.
Yield: 6 quarts
1. Cut beef into 1/2-inch pieces. In oil sauté onion and garlic 2 to 3 minutes; add beef and sauté until browned on all sides.
Boneless Beef Chuck (IMPS/NAMP 115)4 pounds
Vegetable oil3 tablespoons
Onions, chopped3 medium
Garlic cloves, minced3 large
2. Add broth, water, celery, salt and pepper. Bring to a boil; reduce heat. Cover; simmer 1 hour or until beef is tender, stirring occasionally.
Beef broth, single strength2 quarts
Water2 quarts
Celery, sliced2 cups
Salt1 1/2 teaspoons
Ground black pepper1/2 teaspoon
3. Add carrots and noodles; simmer 10 to 15 minutes or until carrots and noodles are tender.

4. Skim fat from surface or refrigerate overnight and remove congealed fat.

5. For each serving: Portion 1 cup soup. Sprinkle with Parmesan cheese, if desired.

Parmesan cheese, grated as needed

This recipe is an excellent source of protein, niacin, vitamin B12, selenium and zinc; and a good source of vitamin B6.
