Stir-Fried Beef and Tomatoes
Pepper-marinated top sirloin slices stir-fried with onions and simmered with tomatoes and black beans.
Yield: 24 servings
1. Combine cornstarch, oil and pepper flakes; pour over beef. Cover and refrigerate 30 minutes.
Cornstarch2 tablespoons
Vegetable oil2 tablespoons
Red pepper flakes1 teaspoon
Beef Loin, Top Sirloin Butt Steak, Center-Cut, Boneless (IMPS/NAMP 1184B), closely trimmed, cut into6 pounds
2. Heat oil over high heat in large braising pan; add beef. Stir-fry about 4 minutes or until beef is brown. Remove beef from pan. Drain beef; discard drippings.

3. Heat oil over high heat in same braising pan; add white onions, garlic and ginger. Stir-fry 3 minutes.

White onions, cut into 1-inch chunks2 pounds
Garlic, minced1 1/2 ounces
Ginger, minced1 1/2 ounces
4. Add broth and soy sauce; bring to boil. Mix cornstarch, sugar and water; stir into pan. Cook until thickened.

Soy sauce1/4 cup
Cornstarch3/4 cup
Sugar1/4 cup
Water1/4 cup
5. Add tomatoes, beans, green onions and reserved beef; heat through.

6. For each serving: Plate 1 cup beef mixture.
Medium tomatoes, cut into wedges4 pounds
Salted black beans, rinsed with warm water8 ounces
Green onions, sliced 1 inch5 ounces
Alternate Fresh Beef Cuts:  
Round, Top (Inside) Round Steaks (IMPS/NAMP 1169)6 pounds
