Beef Tenderloin Kabobs with Tomato Salsa
Broiled tenderloin kabobs with fresh tomato salsa.
Yield: 24 servings
1. Thread 3 pieces of beef onto each skewer. Broil kebabs 3 inches from the heat for 9 to 11 minutes.
Beef Tenderloin, cut into 1-inch pieces (IMPS/NAMP 190A)4 1/2 pounds
Wooden skewers, 6-inch, soaked24
Salt1 1/2 teaspoons
Pepper1/4 teaspoon
Tomato Salsa: 
2. Combine salsa, tomatoes and cilantro; mix well. Cover and refrigerate overnight.

3. For each serving: Place 1 skewer onto each plate; serve with 2 tablespoons salsa.
Prepared salsa2 1/2 cups
Tomatoes, chopped1 cup
Cilantro, minced4 teaspoons
