Carolina Beef and Biscuits
Marinated slices of beef with Carolina Barbecue Sauce, sandwiched in a fresh, warm biscuit and served with coleslaw and potato salad.
Yield: 24 servings
1. In bowl combine vinegar, garlic powder and pepper. Roast beef, basting with vinegar mixture, to medium-rare. Slice 1/8 inch thick; keep hot.
Apple cider vinegar1 cup
Garlic powder1 1/2 teaspoons
Cayenne pepper1 teaspoon
Beef Chuck, Chuck Roll, netted (IMPS/NAMP 116A)6 pounds
2. For each serving: Plate bottom halves of 2 biscuits; top each with 1-1/2 ounces beef and 2 tablespoons sauce. Cover with biscuit tops. Garnish with parsley. Accompany with coleslaw and potato salad.

Carolina Barbecue Sauce: 
CAROLINA BARBECUE SAUCE: In saucepan combine water, tomato paste, apple cider vinegar, Worcestershire sauce, brown sugar and tomato catsup, and chili powder.

Bring to a boil; reduce heat and simmer until thickened, about 10 minutes. Makes 6 cups.

Chili powder2 1/2 tablespoons
