Pampas Churrascaria Spit Roasted Beef Top Round Roast
Garlic-marinated beef roasted and sliced thinly.
Yield: 24 servings
1. Combine garlic, salt and water; reserve.

2. Trim fat from beef top round to 1/4 inch thick; cut beef into two roasts, if desired. Pour marinade over beef roast(s). Cover and refrigerate 10 to 12 hours or overnight, turning occasionally.
3. Remove beef from marinade; discard marinade. Place roast(s) on spit; rotisserie over low coals. Cook approximately 15 to 20 minutes per pound to rare 140°F.
4. Carve roast(s) across the grain into thin slices.
