Walla Walla Smothered Steak
Broiled sirloin steak stacked on Texas toast and topped with Raisin-Onion Chutney.
Yield: 24 servings
Raisin-Onion Chutney: 
1. Heat oil and butter in sauté pan. Add onions; sauté, stirring, until onions begin to brown.

2. Add Marsala, vinegar, raisins, sugar, mustard seeds and pepper flakes. Cover; simmer until onions are tender. Uncover and reduce sauce to a light, syrupy consistency.

Margarine4 ounces
White onions, sliced2 1/4 pounds
Sweet Marsala wine6 cups
Red wine vinegar6 cups
Raisins12 ounces
Sugar12 ounces
Mustard seed1/4 cup
Red pepper flakes1 teaspoon
3. For each serving: Pan broil steak to order. Deglaze pan with 1/4 cup Raisin-Onion Chutney; heat through. Place steak on toast; top with chutney.
