Soho Beef Tenderloin
Teriyaki-marinated tenderloin roasted and served with fried shredded potatoes and sliced vegetables.
Yield: 24 servings
1. Combine teriyaki sauce, wine, lemons, ginger, garlic, green onions, and hot pepper sauce in large shallow pan. Add beef; cover and refrigerate 3 hours or overnight, turning occasionally.
Teriyaki sauce1 quart
Dry sherry1 cup
Lemons, sliced 1/4-inch10 ounces
Ginger, minced3 ounces
Garlic, minced2 ounces
Green onions, sliced2 ounces
Hot pepper sauce1/2 teaspoon
Beef Loin, Full Tenderloin, Side Muscle Off, Skinned (IMPS/NAMP 190A)6 pounds
2. Fry potatoes in batches in 2 inches hot oil until golden brown; drain. Keep hot.

3. Remove beef from pan; discard marinade.

4. Roast beef in 425°F oven 30 to 40 minutes or until internal temperature registers 130°F. Keep hot.

5. For each serving: Plate 2 ounces potatoes; top with 3 ounces sliced beef. Around edge of potatoes arrange 4 leek slices, 2 radish slices, 2 mushrooms, 1 artichoke half and 1 slice each beet, cucumber and ginger.
