Oriental Beef Salad
Oriental Beef Salad
A crunchy base of fresh greens, onions and pea pods, topped with strips of roast beef and a creamy teriyaki dressing.
Yield: 3 quarts dressing
1. Combine yogurt, teriyaki sauce, oil, vinegar and salt; blend until smooth.
Plain yogurt2 1/2 pints
Teriyaki sauce1 1/2 cups
Sesame oil2 tablespoons
Red wine vinegar1/4 cup
Salt1 teaspoon
For each salad: 
2. Arrange romaine leaves on serving plate. Toss remaining vegetable ingredients. Place on top of romaine.

3. Arrange beef strips over top of salad.

4. Sprinkle with toasted sesame seeds.

5. Serve salad with 1/3 cup dressing on side.
Romaine lettuce4 leaves
Lettuce, shredded2 cups
Red onion, thinly sliced1/3 cup
Pea pods, blanched2 ounces
Mushrooms, sliced1/2 cup
Roast beef, cut into strips3 ounces
Sesame seeds, toasted as needed

This recipe is an excellent source of fiber, protein, niacin, vitamin B6, vitamin B12, iron, selenium, zinc and choline.
