Spicy Beef and Fruit Salad
Grilled bite-sized morsels of beef layered on top of mixed greens, fresh fruit, cherry tomatoes and celery, topped with Spicy Citrus Vinaigrette.
Yield: 24 servings
Spicy Citrus Vinaigrette: 
1. Mix orange juice concentrate, oil, lime juice, green onions, jalapeno peppers, sugar and salt; set aside.
Frozen orange juice concentrate2 cups
Vegetable oil1 1/2 cups
Lime juice1 cup
Green onions, chopped6 ounces
Fresh jalapeno peppers, minced2 ounces
Canned jalapeno peppers, minced2 ounces
Sugar2 tablespoons
Salt1 teaspoon
2. Grill or broil beef to desired doneness; slice across grain 1/8 to 1/4 inch thick. Keep warm.
Beef Top Round, closely trimmed, 1 inch thick (IMPS/NAMP 168)6 pounds
3. For each salad: Plate 2 ounces greens, 1 ounce each cantaloupe, grapes, mango, orange, pineapple and peaches; 3 ounces beef, 2 ounces tomatoes and 1 ounce celery. Drizzle with 1/4 cup Spicy Citrus Vinaigrette.

Grape clusters1 1/2 pounds
Mango wedges1 1/2 pounds
Pineapple chunks1 1/2 pounds
Peach slices1 1/2 pounds
Cherry tomatoes, halved3 pounds
Celery, sliced1 1/2 pounds
