Beef and Black Bean Soup
Lean ground beef simmered with black beans and salsa and topped with green onions and sour cream.
Yield: 24 servings
1. Brown beef in stock pot; pour off drippings.

2. Stir in black bean soup, black beans, water and salsa. Bring to a boil; reduce heat. Simmer, uncovered, 45 minutes, stirring occasionally. Keep warm.
Coarse-Grind Ground Beef, 85% Lean (IMPS/NAMP 136)6 pounds
Canned ready-to-serve black bean soup3 quarts
Canned black beans, rinsed and drained2 quarts
Water2 quarts
Prepared medium or hot salsa1 1/2 quarts
3. For each serving: Ladle 1-1/3 cups soup into bowl. Sprinkle with 1 tablespoon green onions; garnish with 1 tablespoon sour cream.
Green onions, sliced1 1/2 cups
Sour cream1 1/2 cups
