Mariachi Beef Sopa
Shredded beef brisket simmered with tomatoes and corn and served in bowls over rice with Jack cheese and crisp tortilla strips.
Yield: 24 servings
1. If using beef brisket, place in braising pan; cover with water. Bring to boil, cover, reduce heat and simmer 2-1/2 hours. Remove beef from water, cool slightly and shred into thin strips; coarsely chop. Reserve.

If using roast beef, shred into thin strips; coarsely chop. Reserve.

2. Heat oil in large stockpot over medium heat. Add remaining ingredients. Cook 10 minutes, stirring occasionally.
Vegetable oil1/2 cup
Onion, chopped1 pound
Celery, chopped12 ounces
Carrots, chopped12 ounces
Green bell pepper, chopped12 ounces
Canned mild chilies, diced12 ounces
Canned jalapeno peppers, minced3 ounces
Garlic, minced1 1/2 ounces
3. To pot add reserved beef, broth, tomatoes, corn and cilantro. Bring to boil, cover and simmer 1 hour. Season with salt and peppers. Keep hot.

Canned whole tomatoes with juice7 pounds
Frozen whole kernel corn, thawed2 pounds
Cilantro, chopped2/3 cup
Salt as needed
Ground black pepper as needed
Cayenne pepper as needed
4. For each serving: Place #16 scoop (1/4 cup) rice in soup bowls. Ladle 1-1/2 cups soup over rice. Top with 1/2 ounce each tortilla strips and cheese. Garnish with cilantro.

CRISP TORTILLA STRIPS: Cut 12 ounces corn tortillas into 1/4 x 1-1/2-inch strips. Fry in hot oil until crisp; drain. Salt lightly.
