Sloppy Jose
Ground beef mixed with tomato sauce and chili beans and served on top of warm cornbread with Parmesan cheese.
Yield: 24 servings
INGREDIENTSQUANTITYDIRECTIONS
  
1. In braising pan brown beef. Drain fat.
Ground Beef (IMPS/NAMP 136)6 pounds
Onion, chopped1 1/2 pounds
  
2. Mix in tomato sauce and chili beans. Bring to boil; simmer 10 minutes.

3. Mix in chilies, jalapeno peppers, chili powder, vinegar, sugar and garlic powder; simmer 10 minutes. Keep hot.
Canned tomato sauce6 cups
Canned chili beans in sauce4 cups
Canned mild chilies, diced1 1/4 pounds
Canned jalapeno peppers, minced1/2 - 1 ounces
Chili powder3 tablespoons
Red wine vinegar3 tablespoons
Sugar1 tablespoon
Garlic powder2 teaspoons
  
4. For each serving: Plate cornbread square; ladle over 3/4 cup beef mixture. Top with 1 teaspoon cheese and 1 tablespoon each sour cream and green onions. Garnish with cilantro.
