Mediterranean Beef Hero
Grilled flank steak layered with lettuce, provolone cheese, tomatoes and cucumbers, on a toasted roll spread with Mediterranean Mayonnaise.
Yield: 24 servings
Mediterranean Mayonnaise: 
1. Mix mayonnaise, olives, garlic, mustard, lemon peel and basil; set aside.
Mayonnaise3 cups
Canned pitted ripe olives, drained and finely chopped4 ounces
Garlic, minced1 ounce
Hot-sweet mustard3 tablespoons
Grated lemon peel3 tablespoons
Dried basil1 tablespoon
2. Grill or broil beef to desired doneness; slice across grain 1/4 inch thick. Keep warm.
Beef Flank Steak (IMPS/NAMP 193)6 pounds
3. For each sandwich: Spread each cut side of 1 roll with 1 tablespoon Mediterranean Mayonnaise. Layer bottom half of roll with 2 lettuce leaves, 1 ounce cheese, 1 ounce tomato, 1 ounce cucumber, 3 ounces beef and 1/2 ounce onion.

Cover with top half of roll, cut side down.

NOTE: 4-1/2 pounds sliced, leftover cooked Roast Beef can be substituted for the Flank Steak.

Provolone cheese, sliced1 1/2 pounds
Tomato slices1 1/2 pounds
Cucumbers, sliced1 1/2 pounds
Red onion, sliced12 ounces
