English Hot Roast Beef Sandwich
Roasted beef, sliced and served warm with gravy and mustard on a toasted bread slice.
Yield: 96 servings
INGREDIENTSQUANTITYDIRECTIONS
  
1. Season beef with salt and pepper. Roast to 140 degrees (medium). Slice thin.
Beef Knuckle Roast, trimmed (IMPS/NAMP 167)18 pounds
Salt as needed
Ground black pepper as needed
  
2. Heat gravy; stir in parsley.
Prepared beef gravy1 1/2 gallons
Dried parsley flakes1 cup
  
3. Spread each bread slice with 1 teaspoon mustard. (Or serve sandwiches with mustard packets, if desired.)

4. For each serving: Plate 1 slice bread; top with 2 ounces beef and 1/4 cup gravy.
