Beef and Brie Sandwich with Green Chili Mustard-Mayonnaise
Thinly sliced roast beef layered on rye bread with Brie, cornichons, tomatoes and Green Chili Mustard-Mayonnaise.
Yield: 24 servings
Green Chili Mustard-Mayonnaise: 
1. Combine mayonnaise and mustard; cover and refrigerate.
Mayonnaise1 1/2 cups
Prepared green chili and garlic mustard1 1/2 cups
2. For each sandwich: Spread 2 bread slices with 1 tablespoon mayonnaise mixture each. Top 1 bread slice with 1 lettuce leaf, 2 ounces beef, 1-1/2 ounces cheese, 3/4 ounce cornichons and 1-1/2 ounces tomatoes. Top with remaining bread slice.

NOTE: If green chili and garlic mustard is not available, combine 1 cup Dijon-style mustard, 1/2 cup (4 ounces) canned hot chilies and 1/2 ounce garlic in food processor or blender; process until smooth.
