Roadhouse Red Hash
Cubed beef sautéed with potatoes and onions in a barbecue sauce and served with toast points.
Yield: 24 servings
1. Heat butter and oil over medium heat. Add potatoes and onions. Cook, stirring occasionally, until potatoes are brown and crispy, about 20 minutes.

Oil3/4 cup
Red potatoes, cubed and boiled6 pounds
Onions, chopped3 pounds
2. Add beef; season with salt and pepper, to taste. Cook just until heated through.
Cooked beef, 1/2-inch pieces3 pounds
Salt as needed
Pepper as needed
3. Mix together ketchup and barbecue sauce. Add 1 cup of sauce mixture to hash; stir to combine.

Prepared barbecue sauce2 cups
4. For each serving: Portion 8 ounces hot hash onto ovenproof plate. Spoon 2 tablespoons sauce over hash and heat under salamander until hot and lightly browned. Accompany with 2 toast points.
