Bao Wow Steak Sandwich
Chile-seasoned sirloin strips, stir-fried and served on a Chinese bao bun with soy-ginger mayonnaise and a side of Asian slaw. Try this! Signatures - If Chinese bao buns are not available, use any soft bun and menu as Szechwan Steak Stir-Fry Sandwich. Accompaniments--Asian Slaw: Season prepared creamy coleslaw with soy sauce, rice vinegar and sesame oil. For added Asian appeal, offer Chinese mustard, soy sauce and chile oil as condiments on the side. Garnish with toasted sesame seeds.
Yield: 24 servings
Bao Wow Sauce: 
1. To make Bao Wow Sauce: In bowl mix oil, chile paste, ginger, garlic, and pepper until thoroughly blended. Cover and reserve. Yield: 1-1/2 cups.
Vegetable oil3/4 cup
Chinese chili paste with garlic3/4 cup
Ginger, grated3 tablespoons
Garlic, minced1 tablespoon
Ground black pepper1 1/2 teaspoons
Soy Ginger Mayonnaise: 
2. To make Soy-Ginger Mayonnaise: In bowl mix mayonnaise, soy sauce and ginger until thoroughly blended. Cover and refrigerate. Yield: 3 cups.
Mayonnaise3 cups
Soy sauce3 tablespoons
Ginger, grated3 tablespoons
3. Thinly slice steak into strips. Place in utility pan. Cover and refrigerate.

4. For each sandwich, to order: In skillet or wok over high heat stir-fry 4 ounces steak and 3/4 ounce onions in 1 tablespoon Bao Wow Sauce. Spread 1 tablespoon Soy-Ginger Mayonnaise on each cut side of 1 bun.

Plate bottom bun half. Top with 1 leaf lettuce and 2 tomato slices (optional), steak mixture and bun top. Serve with Asian Slaw.
