Trattoria Burger
A grilled burger, topped with roasted red bell peppers, pesto mayonnaise and mozzarella cheese, served on focaccia bread. Try this! Signatures--Grilled Steak Panino: Split focaccia; spread cut sides with Pesto Mayonnaise. Accompaniments - Parmesan Potato Chips: Sprinkle freshly prepared handmade potato chips with grated Parmesan cheese ad chopped parsley. Make a sandwich with thinly sliced steak or roast beef, roasted red peppers and fontina cheese. (Packaged potato chips, quickly warmed in the oven and held under a heat lamp can also be used.) Pesto Mayonnaise: 
1. To make Pesto Mayonnaise: In bowl mix mayonnaise and pesto until thoroughly blended. Cover and refrigerate. Yield: 3-1/4 cups
Mayonnaise2 1/2 cups

Herb Seasoning: 
2. To make Herb Seasoning: In bowl mix basil, garlic, salt and pepper until thoroughly blended. Cover and reserve. Yield: 1/2 cup
Dried basil1/2 cup
Garlic, granulated2 tablespoons
Salt2 tablespoons
Ground black pepper1 tablespoon
  
3. For each serving, to order: Season EACH side of 1 patty with 1/2 teaspoon Herb Seasoning. Grill to 157°F internal temperature. Top with 1 slice cheese and melt under salamander.

Spread 1 tablespoon Pesto Mayonnaise on EACH cut side of bread. Plate bottom bread half. Top with burger, 1-1/2 ounces pepper strips and bread top.

Serve with Parmesan Potato Chips.
