Black Jack Burger
A blackened burger topped with melted Jack cheese, served on a sesame bun with Creole mayonnaise, onions and tomatoes. Try this! Signatures - Black Jack Cheese Steak: Replace burger with a sandwich-sized steak, seasoned with Cajun seasoning mixture and grilled; serve on a steak roll. Accompaniments - Marlboro Onion Strings: Slice onions paper-thin; salt lightly. Toss with flour and deep-fry until golden and crispy. Try this! Creole Mayonnaise: 
1. To make Creole Mayonnaise: In bowl mix mayonnaise and mustard until thoroughly blended. Cover and refrigerate. Yield: 3-1/2 cups

2. In bowl toss tomatoes and onions in dressing to coat. Cover and reserve.

Red onion, thinly sliced48 slices
Prepared vinaigrette dressing1/2 cup
  
3. For each serving, to order: Season 1 patty on EACH side with 1-1/2 teaspoons Cajun seasoning mixture. Grill to 157°F internal temperature.

Top with 1 slice cheese and melt under salamander. Spread 1 tablespoon Creole Mayonnaise on EACH cut side of 1 bun.

Place 2 slices EACH marinated tomatoes and onions on bottom bun half. Top with grilled burger and top of bun. Plate and serve with Broccoli Slaw and Marlboro Onion Strings.

Broccoli Slaw:  
Accompaniments - Broccoli Slaw: In bowl combine prepared broccoli slaw, shredded carrots, cole slaw dressing and horseradish. Toss until thoroughly mixed.

Cover and refrigerate. Yield: 4 quarts.
