Jamaican Jerk Prime Rib
A slice of oven-roasted bone-in prime rib coated with Jamaican seasonings and finished on the grill with an island-style mango, lime and pepper jelly glaze. Caribbean and South American are the flavors of the year--and they're a great way to dress up prime rib for the holidays. Whether you start with a pre-cooked prime rib or roast it yourself, a quick spice rub is all it takes to give prime rib a lively Caribbean accent and a whole new attitude. Jamaican Seasoning Mix: 
1. To make Jamaican Seasoning Mix: In a bowl, mix allspice, thyme, pepper and cinnamon to blend thoroughly. Cover and reserve. Yield: About 3/4 cup.
Ground allspice4 tablespoons
Dried thyme4 tablespoons
Coarsely ground black pepper4 tablespoons
Ground cinnamon3 teaspoons
  
2. Season beef (approximately 36 pounds) with 1/2 cup Jamaican Seasoning Mix. Roast to 135°F internal temperature. Hold for service or cool; cover tightly and refrigerate.

Jamaican Glaze: 
3. To make Jamaican Glaze: In saucepan, mix ingredients and bring to boil. Cool; cover and refrigerate. Yield: About 4-1/2 cups.
Pepper jelly1/2 cup
Fresh lime juice1 1/8 cups
Mango chutney3/4 cup
Prepared steak sauce3/4 cup
Red bell pepper, minced3/4 cup
Jalapeno peppers, minced3 tablespoons
  
4. For each serving, to order, Slice off 1 beef rib between the bones. Sprinkle each side of rib with 1/4 teaspoon Jamaican Seasoning Mix. Grill rib, browning each side.

Brush one side of rib with Jamaican Glaze and grill to desired doneness, turning once and coating other side with glaze. Plate rib; sprinkle with 1 tablespoon parsley.
