Mediterranean Burger
A grilled beef burger seasoned with Greek spices and served on a sesame bun with tangy cucumber-yogurt gyro sauce. Four steps to a signature burger: 1. Give it a rub: a few ground spices can create a whole new flavor profile. 2. Add a simple sauce for flavor and menu appeal. 3. Upgrade the bread: This Mediterranean Burger would be right at home in a pita or rolled up in a wrap. 4. Say cheese: Greek kasseri would be perfect here. Mediterranean Spice Mix: 
1. To make Mediterranean Spice Mix: Grind pickling spice in blender or spice grinder. Add flour, paprika, garlic, cumin, mint, oregano, salt and pepper. Blend until thoroughly mixed.

Cover and reserve. Yield: 1-1/2 cups.
Pickling spice1/4 cup
All-purpose flour6 tablespoons
Hot paprika6 tablespoons
Garlic, granulated1/4 cup
Ground cumin2 tablespoons
Dried mint leaves2 tablespoons
Dried oregano2 tablespoons
Salt2 tablespoons
Ground black pepper1 tablespoon
Gyro Sauce: 
2. To make Gyro Sauce: In bowl, mix mayonnaise, yogurt, sour cream, feta cheese, cucumber and mint leaves until thoroughly blended. Cover and refrigerate. Yield: 4-1/2 cups.
Mayonnaise1 1/2 cups
Plain yogurt1 cup
Sour cream1 cup
Feta cheese, crumbled4 ounces
Cucumber, peeled and chopped3 ounces
Dried mint leaves2 tablespoons
  
3. For each serving, to order: Sprinkle one side of 1 patty with 1 tablespoon Mediterranean Spice Mix. Grill or broil each patty to an internal temperature of 155°F for a 15-second hold.

Toast or grill cut sides of 1 bun. Spread 2 tablespoons Gyro sauce on bun bottom. Top with 2 tomato slices and grilled burger.

Add 1/2 ounce onions and cover with bun top. Plate and serve with additional Gyro Sauce, if desired.
