A BLT with an upgrade: thin slices of roast beef layered with crisp bacon, fresh lettuce and tomato and black pepper mayonnaise on toasted sandwich bread. Yes, you can improve on perfection. If you've got the perfect BLT, try adding a little roast beef and you'll see what we mean. It's a great-tasting combo you can really promote (and charge a bit more for, too). And hey, while you're at it, why not upscale it even further? Build it on focaccia with pancetta, arugula, and Roma tomatoes. Presto: It's a roast beef panino.
Yield: 24 servings
Black Pepper Mayonnaise: 
1. To make Black Pepper Mayonnaise: In a bowl, mix mayonnaise and black pepper until thoroughly blended. Cover and refrigerate. Yield: 3 cups

2. For each sandwich, to order: Toast 2 bread slices. Spread 1 tablespoon Black Pepper Mayonnaise on one side of each bread slice.

Top one slice with 2 lettuce leaves, 2 tomato slices, 3 ounces beef and 2 bacon slices. Cover with other bread slice; cut in half.
