Tumbleweed Ranch Burger
A burger for grownups: spicy seasoned ground beef topped with crisp fried onion strings and cool ranch dressing. May is burger month, the perfect time to put a little spring in your burger menu. It's as simple--and cost-effective--as taking a fresh look at the sides and ingredients you've got on hand. Caesar dressing, romaine and Parmesan makes a Caesar Burger. Or serve it on grilled rye with melted Swiss, coleslaw and Thousand Island and call it Patty Reuben. You get the idea. Spicy Seasoning Mix: 
1. To make Spicy Seasoning Mix: In bowl, blend ingredients until thoroughly mixed. Cover and reserve. Yield: About 1/4 cup.
Paprika2 tablespoons
Salt1 tablespoon
Dried thyme2 teaspoons
Coarsely ground black pepper2 teaspoons
Coarsely ground red pepper1 teaspoon
Coarsely ground white pepper1 teaspoon
  
2. For each serving to order: Sprinkle one side of one patty with 1/2 teaspoon Spicy Seasoning Mix. Grill patty to 155°F. internal temperature for a 15-second hold.

Meanwhile, deep-fry 2 ounces onion rings. Toast or grill cut sides of one bun. Spread 1 tablespoon ranch dressing on bun bottom.

Top with 2 tomato slices, grilled burger and hot onion rings or strings. Cover with bun top. Plate and serve.

Time Saving Solutions: Use prepared blackening spice as an alternative to the Spicy Seasoning Mix.

Serving Suggestion: Serve with a cold vegetable salad; extra onion strings and ranch dressing on the side for dipping.
