Steak and Potato Sandwich
Cheese steak and fries all rolled into one: thinly sliced steak sautéed on the griddle and piled on a soft hoagie roll with curly-cut French fries and melted cheese sauce. 1. Slice partially frozen beef into 1/8-inch thick slices on meat slicer. Divide into twenty-four 5-ounce portions. Cover and refrigerate until ready to use.

2. For each serving, to order: Toast or grill cut sides of one roll. Deep-fry 2 ounces potatoes; drain. Cook one beef portion until just cooked through, turning as needed.

Plate roll; place beef on roll bottom. Spread 1 ounce cheese sauce over beef and top with hot potatoes. Close sandwich and serve immediately.

Time Saving Solutions: Value-added portion control steaks or Philly-style cheese steak beef products may be substituted for sliced fresh beef.
